"Passelys" we produce red, white and rosé wines,
so our range is composed of "A.O.C" Cahors and"
Vins de Pays ".

"A.O.C" is an official category of quality
wine produced in a defined style with a garantee of origin.
"Vin de Pays" is an official category of wine produced
in a spécific area.
Our vineyard covers 8 hectares...
We have turned to sustained farming, which means
that we don't use much weed killer.
In Cahors appelation, the vineyard mustn't yiel
more than 50 hectolitres per hectare.
The vines are planted at a density or around 4800
vine stocks per hectare to give lower yiels per stocks and grapes,and
wines are more concentrated and richer.
Our wines are estate bottled.
Harvest, for part of the vigneyard of "Passelys"are
made by hand from generation to generation
Spring and autumn in our region are marqued seasons, in temperate
climate, but since 4or 5 years we have hot and very dry summers
with drought, and we also have stormy summers, so harvest are
made at the end of september but climate is changing so quickly...
